If you’re like me and you love anything sweet and fizzy then you’ll love this recipe. I love this cocktail and its definitely a go to whenever its on a drinks menu! Now if you’re throwing a house party and you want to impress your guests you can whip this up in a heartbeat! it is quick, easy and simply amazing. P.s You can decide to add a bit of alcohol its entirely up to you 😉
What you’ll need;

Fanta – 2 cups (50cl)
Sprite – 2 cups (50cl)
Grenadine Syrup – 1/2 cup
Angostura Bitters ( 2 teaspoon)
Ice Cubes
1 Orange
1/2 Lemon
1/2 Cucumber
Lets get started;

STEP 1; The first thing you want to do is make your ice cubes. You can use fanta or sprite to make your ice cubes, preferably sprite.

STEP 2 : Cut the lemon and cucumber however you like them cut. I like mine thinly sliced. You can also add a sprig of mint but this is optional.

STEP 3 : Lastly, in a jug, mix together your fanta, sprite and grenadine syrup. Mix thoroughly and add your angostura bitters. squeeze in the juice from the orange. Now add in all the fruits you cut earlier and the ice cubes.

….its ready! Make sure you serve it chilled.

Nigerian chin chin is an all time favorite and I absolutely love making it. You’ll have to get your hands messy with this one but trust me its all worth it in the end! To make this delicious crunchy snack, follow the recipe below.

What you’ll need:

  • 3½ cups of flour (400 grams)
  • 1teaspoon of Baking powder
  • ½ cup of sugar
  • 150 grams of Margarine
  • 1 cup of liquid milk
  • 1 egg
  • ½ teaspoon of nutmeg

 

lets get into it!

Step 1: Combine all dry ingredients in a bowl, (flour, baking powder, sugar, nutmeg). Make sure its well incorporated then add your margarine and mix this thoroughly with your hands until it has a breadcrumb like texture.

Step 2: Now mix the egg and milk together then add it to the dry ingredients. Mix it all together to form a dough. I usually cover it with a cloth and leave it for 15 minutes before I roll it out but this is optional.

Step 3: Roll out the dough on a flat surface and begin to roll it out with a rolling pin. Then using a knife, cut vertically and horizontally on the dough until you have perfect squares.

Step 4: Heat up some oil in a pan and once its hot put your cut dough pieces into the pan and let it fry. When it’s done frying, make sure you use some kitchen towel to get that excess oil off. Also wait for 15 minutes for it to cool…and there you have it! Your chin chin is ready!!!!!!!

APPLE CRUMBLE

It’s all apples apples apples, and a little bit of cinnamon! Apple Crumble is a classic comfort food with delicious warm apples and a golden, crispy crumble. I love this recipe!

There might be quite a number of ingredients used in this recipe, but the method is straight forward and super easy. let’s get into it already! I’m using Granny Smith apples for this recipe, but you can use any apples.Feel free to add more cinnamon if you want that extra taste (apples and cinnamon go very well together).

What you’ll need:

  • 6 large cooking apples
  • 100g  caster sugar (for the apples)
  • 1 tsp ground cinnamon
  • 100ml water
  • 2 tsp cornflour
  • 300g plain flour
  • 200g unsalted butter
  • 175g caster sugar (for the crumble)
  • 2 tbsp custard powder

let’s get started:

  • Peel and cut the apples into cubes.  Put the chopped apples in a sauce pan,  pour the water in then add sugar and cinnamon.  Let it bubble for just  a few minutes until the apples begin to get just a little bit soft.
  • While its bubbling, mix the corn flour with just a little bit of water to make a paste. Add this into the apples and mix together to thicken the sauce and to give it that extra flavour from the corn. leave that for another minute or so and then place into an oven dish . You don’t want to leave that for too long because the apples are still going to cook in the oven. You might also want to keep the extra sauce left in the saucepan for serving afterward.

  • Now let’s move on to the crumble; add the flour, butter, sugar, and custard powder in a bowl . Mix them all together until you obtain a crumble, you can also have some big or small chunks in there .

  •  pour all the crumble(trust me you want all of the gooood stuff) over the apples and pop that into an oven at 180oC for 30-40 minutes or when the crumble is nice and golden

  • You can serve this with some vanilla custard or ice cream like I usually do, and the thickened sauce from the apples.
